Detailed Product Description
The selection Il Graticcio , is produced in the heart of thedenomination DOC Valpolicella classico, in the village Valgatara. The family that create it, sinks deep roots,into the knowledge of the vine growing and the experience of the wine making. In the farm, a particular care to all stagesof production is maintains: from the growing of vines, the harvesting, the winemaking, the ageing, concluding with the bottling and final sale, all inaccordance with the family saying : quality at the countryside means quality inthe glass.

Red wine with an intense ruby, it is obtained from thebest grapes of every harvest, left to wither on wooden grids and pressed inJanuary. Wine ennobled by, a skilful ageing of two-years in small Frenchdurmast wood barrels and then ten/twelve-month-long of refinement in bottle.Aroma intense of cherries. Taste soft, dry, robust and full-bodied. Excellentwith braised beef, juicy main courses and mature and spicy cheese varieties.

Red wine pouring an deep ruby colour. Aroma intense,reminiscent of spices and retaining perfumes and flavours of cherries and woodfruits. Wine brought to excellence, with a skilful ageing of three years insmall French durmast wooden barrels, and then ten/twelve-month of refinement inbottle. Taste soft, dry, robust and full-bodied. Excellent mate for challengingdishes such as wild game, braised beef,grilled meat, but good also in pairing with any kind of cold meat, salami andseasoned spicy-flavoured cheese varieties.

It is produced with the Rondinella, Corvina andMolinara grape varieties; is the wine that is closest to the origins of theland of production : the Valpolicella. Red wine with a ruby colour. The fragrance is wineyand inviting. Taste full-bodied, with a pleasant roundness. It is obtainedusing the traditional technique called ripasso, carried out by letting theValpolicella Classico undergo a second fermentation on the marc of the Amarone.Two-year-long ageing process and the subsequent refinement in bottle (at leastfive/six months) confer the wine a pleasant and appreciated roundness. WinePerfect with main courses of strong flavour and any kind of cold meat andsalami.

Red wine, pouring an intense ruby colour. Aromaintense of cherries and fruit of wood with light perfumes of spies. Tasterobust and full-bodied. The vinification process is similar to that carried outfor the Amarone; a slight withering of the grapes, pressing, long stay on themarc, two-years ageing in small French durmast wooden barrels and asix/seven-month-long refinement in bottle. Wine perfect with main courses ofstrong flavour such as grilled meat or braised beef, it also goes well with anykind of cold meat and salami and seasoned cheese varieties.

Red wine, pouring a ruby colour. Aroma intense ofcherries. Taste sweet, full-bodied. It is obtained from the same grapevarieties as the Amarone (Corvina, Corvinona, Rondinella), but left to witheron wooden grids, for a much longer period of time (until March), thus obtainingan optimum concentration of the must. Wine excellent when accompanied totypical regional dry pastry, such as short pastry or dry cookies, with fusingchocolate. Tempting companion also with creamy pastry.

Passito BiancoGirolamo

White wine with the fine bouquet of intense scents,amongst which vanilla, honey and caramel predominate. The taste is strong, butat the same time full and harmonic. The grapes (Moscato, Garganega andSauvignon) are left, resting on wooden grids until February/March, when theyare pressed. The wine is aged in small French durmast wood barrels forapproximately twelve months and refined in bottle. Excellent meditation anddessert wine. It should be tried chilled as a summer aperitif or asaccompaniment to small morsels of spicy cheese (spicy gorgonzola blue cheese,Roquefort,...) covered with honey drops.
